Tonight’s dinner came together almost accidentally.
I started with chicken, zucchini, frozen corn, and a few ingredients already sitting in the kitchen. The tomatillos, garlic, and jalapeño became a roasted green salsa blended together while the corn roasted slowly in the skillet before turning into a creamy street-corn side dish.
By the time dinner was finished, the house smelled warm and comforting, and my son grabbed a full plate to take with him before heading out with friends.
Sometimes, the meals that do not seem like much while cooking become the ones people remember most.
Ingredients
12 oz chicken tenders or chicken breasts
1 zucchini, chopped
5 oz frozen corn
2 tomatillos
1 jalapeño
2 garlic cloves
5½ oz rice
10 oz water
Quesadilla blend shredded cheese
Queso fresco, crumbled
1–1½ tablespoons mayonnaise
Fiesta seasoning
Blackened chili seasoning
Garlic salt
Salt and pepper
Small splash of vinegar
Fresh cilantro if desired
Instructions
Cook the Rice
Add rice and water to a saucepan with a pinch of garlic salt.
Bring to a gentle boil, cover, reduce the heat to low, and cook until tender.
Make the Roasted Green Salsa
Roast tomatillos, jalapeño, and garlic in a skillet with a small drizzle of oil until softened and lightly blistered.
Add to a blender with a small splash of vinegar, salt, and pepper.
Blend until smooth.
Cook the Chicken & Zucchini
Season chicken and zucchini with fiesta seasoning, blackened chili seasoning, and garlic salt.
Cook the chicken in a skillet until golden and cooked through.
Add zucchini and cook until tender.
Pour the fresh green salsa over the chicken and zucchini mixture and stir together gently.
Make the Mexican Street Corn
Add frozen corn to a lightly oiled skillet.
Cook until lightly roasted, with golden-brown spots.
Lower the heat and stir in mayonnaise and shredded quesadilla cheese until creamy.
Top with crumbled queso fresco.
Assemble
Serve the chicken and zucchini mixture over rice if desired.
Add the Mexican street corn on the side.
Top with extra queso fresco or cilantro if desired.
Balanced.
